Pinot NoirWith a nice medium ruby color the Pinot is deeply flavored with an intense cherry aroma and hints of mint. The mouth is very well balanced, fresh and smooth. One will also find delicious raspberry and black currant flavors with soft tannins and a nice spiced finish. Short maceration at low temperatures for four days before fermentation. The skins are pressed and the pressed juices are reincorporated. Fermentation is done without any skin contact. The temperature of fermentation is 16 degrees C. |

Cuvee Gustave FayettProduced in small quantities and only from our outstanding vintages, the Gustave Fayet is the pride of Sacre Bleu. The varietal is Cabernet Sauvignon (70%) and Merlot (30%). Our Cuvee is 100% aged in 1 to 5 year old premium French oak barrels. The Cabernet Sauvignon and Merlot grapes come from the hillsides of the estate. After fermentation, the wine remains in contact with the skins for an additional month. The press are separated and the wine is aged separately during 12 months in the 225 liters French oak barrels. Gustave Fayet is a Cuvee that over delivers in taste. It is concentrated and complex with an excellent ageing capacity. Beautiful ruby color with reflections of purple-violet. The aromas are intense, indeed, explosive, dominated by red fruits and by notes of roasted coffee beans. The palate is both concentrated and fresh with smooth tannins. The oak is integrated with a nice cocoa finish. |

CVM BarriqueProduced in small quantities the Sacre Bleu white blend comprised of Chardonnay (50%) Viognier (25%) and Muscat Petits Grains (25%). Within the Chateau de Raissac estate wine cellar, the Chardonnay, Viognier and Muscat Petits Grains are elaborated separately and blended in function of their individual qualities. The juices are cold settled and fermented for three weeks and are then kept on lies for one month to improve their aromatic quality. The 50% portion of Chardonnay has been fermented and aged 6 months in 225 liters French oak barrels. The Sacre Bleu CVM blend appears crystalline, the pale yellow color shimmering with silver reflections combines freshness and elegance. Bottled in a clear white Classic Bordelaise from Saverglass, CVM will dazzle from the retail shelf. The restrained and chic Sacre Bleu label will insure that its feminine appeal prevails. |
